An Update from Hannah + a Food Blog

The past few months have been filled with some ups and downs for me in the training department. In August, some of our team flew back to the Midwest for a training camp in Ely, MN. We stayed at Erin’s family house on Burntside lake which is right on the edge of the Boundary Waters. Throughout the week we had several hard interval sessions, time trials, speed workouts, and of course some swimming. The idea behind going down to sea level was to focus on power, speed, snappiness, and increasing aerobic capacity. I felt like the camp was super productive and also so much fun!

A few days after our camp, I somehow managed to hurt my back pretty bad, so my training came to a screeching halt. The past few weeks have been filled with a lot of doctor appointments, PT appointments, treadmill walking, and some tears. I just found out that I have a bulged and torn disc in my lower back which has been causing a lot of my pain and numbness. Although I am obviously not thrilled about the situation, I am thankful for the activities that I am still able to do and feel lucky to be surrounded by such a supportive team & community.

Noel is back in town, so we have been frequenting the pool together!!

I’m still unsure about the timeline of my injury and what the next month and beyond will look like, but I have hope that I will be on the mend. ANYWAY, since I have had some time on my hands, I’ve been doing quite a bit of cooking and baking so I thought I would share some of my favorite recipes as of lately.

Here we go.

Greek Bowl

So, so, good and different than the typical bowls I make. Rice, pickled onions, cucumbers, roasted chickpeas, tomatoes, grilled chicken,feta and tzatziki. I didn’t really follow a recipe for this one, but I includeda simple Greek bowl recipe below.

Kale-Lemon-Chickpea Salad

This was really good and so easy to make. I tossed somequinoa in the salad too.

Pink Pasta

So we had a Barbie themed dinner party and I made this pink pasta. I thought it was going to taste nasty but it was quite good.

Chicken Satay

Grilled chicken with such a good coconut milk curry marinade, lots of peanut sauce, and some farrow. A new summer favorite.

Summer Caprese

Peaches, tomatoes, basil, mozzarella, balsamic, salt, pepper, olive oil. We made this at our training camp in Ely. Could eat this every day.

Ginger Sesame Chicken with Roasted Brussel Sprouts

This recipe comes from my favorite food blogger. Can’t fully take credit for this one since Reid made it for me, but had to include since it was so good.
